Cooking with the Heritage is a pleasure: it’s very easy to operate, gets up to temperature quickly and has excellent heat distribution for consistent cooking performance.
The Heritage firebox has a double-glazed ceramic glass door, which makes it easy to monitor the fire, as well as making the stove a focal part of the kitchen.
Large logs (up to 210mm in diameter and 480mm long) are easily accommodated: the stove will keep going all night if a large log is added and the air intakes are closed before retiring to bed.
There are two air controls for primary air: a sliding vent above the door that drops air down the face of the glass, keeping it clean; and a rotating cap on the ash pan door that introduces air to blast up through the bottom of the grate. A secondary air heating chamber runs along the top of the firewall partition for greater efficiency.
The top oven is large, with a capacity of three cubic feet (450mm wide, 500mm deep, and 365mm high) and is ideal for serious cooking. The sides and back are heavy cast iron for heat retention and even distribution.
The oven door has a double-glazed, safety glass window with an external guard-bar. The oven has six tray rails, and is heavily insulated and lined. There is an accurate thermometer on the door of the top oven for reliable temperature reading, in both Celsius and Fahrenheit. The bottom oven runs at three-quarters of the temperature of the top oven, and has four tray rails. Its capacity is 1.8 cubic feet (450mm wide, 500mm deep, 220mm high). It can be used as a heating drawer of fruit drying compartment if the door is ajar.
The Heritage’s cooking plates are made from heavy cast iron with ground-smooth cooking surfaces. They have an excellent reputation for durability, and unlike many other wood stoves, are not prone to warping or cracking. There are three hot plates, providing a very large surface area that allows the use of several pots or pans simultaneously. They provide instantly accessible variable heat: left for boiling, searing and getting things going, and right for simmering, slow cooking and keeping things warm.
The ash pan is large, so only requires infrequent emptying. The cooking plates are easily removable, and the stove also has two cleaning ports that allow for easy access to clean the stove when required. Owners of the Heritage appreciate the spacious cleaning ports that allow the provided poker and cleaning tool generous movement in cleaning. The Heritage has a flue collar designed for a 150mm flue. The flue bypass lever is used to divert air directly up the flue when lighting the fire, and is then switched over to force the hot gases to circulate around the ovens, heating them, on their way to the flue.
